Breakfast sandwiches
6 whole eggs
3/4 cup egg whites
salt and pepper to taste
onions, peppers, tomatoes, etc. Diced, optional 1
2 English muffins
12 slices Velveeta cheese
12 slices Canadian bacon or lean ham
Preheat oven to 350°.
In a bowl combine eggs, egg whites, salt, pepper and veggies, if using. Spray a 9 x 13″ baking dish with nonstick cooking spray. Add egg mixture to prepared pan and bake for 15 to 20 minutes. Let cool. Divide egg mixture into 12 servings. Late out 12 English muffins and top with one portion of egg, ham and cheese. Top with remaining half of muffin. Wrapped in aluminum foil and freeze. To reheat: unwrap and microwave for one minute.
